* Update 9/18/24: We became aware 5280 Mexican Grub has permanently closed. There is now a sign in the window indicating that a new restaurant, “Antoine’s Steakhouse” is coming soon. The name and logo matches that of an Antoine’s Steakhouse in Lancaster, California. We’ve never been to that restaurant, but it has not-so-great reviews. Let’s hope they are able to do better in Pahrump.

The food was not great. The service WAS great and friendly, which made me think maybe they were just having an off night.
5280 Mexican Grub started out as a food truck here in town. Apparently the food truck business was successful enough they were able to setup this restaurant on the outskirts of town. It’s an unfortunate location, way out Mesquite on the Northwest edge of town, not a highly trafficked area. However the facility is spacious inside, with a bar, restaurant seating, and event spaces.
I see posts on Facebook quite often about various events being hosted at 5280. They seem to maintain a busy schedule to draw people in — live music, Comedy night, theatrical events. When I visited it was, by chance, Karaoke night. It was not busy, with maybe 3 couples sitting in the Karaoke area and myself being the only one there for dinner.
The server was warm and friendly. I ordered a plate of carne asada street tacos. The meat tasted… stale? Not like it had gone bad or was unsafe to eat, but like it had been sitting around a while. Like meat that has been sitting around in the fridge and you’re like “hm, I better eat this quick before it goes bad”. Well I was hungry so I ate the tacos anyway — “whatever doesn’t kill you only makes you stronger” is my motto. (I did not get sick or anything.)
They had a special item for dessert, deep fried caramel cheesecake bites. I went for it, and I’m glad I did. The dessert was quite tasty. No complaints there.
They have many interesting looking items on the menu, so I will go back and give them another try sometime. Hopefully I’ll be able to update this review more favorably next time.
